Pork Trotters with Vinegar (猪脚醋)
Went to my friend's hse last week & still thinking of 猪脚醋 which her church's friend prepared.. Hence decided to prepare this dish myself today.
Ingredients (Serving for 4 people or more)
2 Pig's Trotter (ask for the front trotter as it consist more meat then bones)
2 Big Piece Of Old Ginger, about 500g (skinned & smashed lightly)
1 bottle Sour Black Rice Vinegar
5 tbsp sesame oil
3/4 cup brown sugar (useless if you choose to use a sweetened black vinegar)3 - 5 bowls of Water (add enough water to cover the meat)
4 to 5 hard boil Eggs (optional)
Method:
1. Boil the pork trotters vigorously for 15 min, and discard the water with all the scum. Rinse.
2. Fry the ginger and sesame oil till fragrant.
3. Stir-fry the pig's trotters pieces with the remaining oil until it's slightly cook. While frying you'll notice water drain out from the meat.
4. Put the fried ginger into a big pot. Add vinegar and water in it. Bring it to boil and let it simmer in low heat for 30 mins until the ginger are soft.
5. Add the pig trotters, then simmer for about 2 hours. (Or you can transfer to a slow cooker, then simmer on low for 4 hours.
6. When the pig's trotters are ready, add the brown sugar to taste and cook till the sugar dissolved.
7. Add the hard boiled eggs to the stew after the trotters are done.

鲜得来 @ Next
Atmosphere is good. However, very disappointed with the service. Food I have ordered did not arrive completely. I have requested at least 5 waitresses/waiters to get my soup replaced. Drink is expensive, around $2.50 per can. Overall, each person needs to spend at least $30. Not worth the $$.
